\u00d6zellikle Gaziantep baklavas\u0131 \u00e7ok \u00fcnl\u00fcd\u00fcr. Bir\u00e7ok ulusun mutfa\u011f\u0131nda yer etmi\u015f baklava bir\u00e7ok ulus taraf\u0131ndan da sahiplenilir. Baklavan\u0131n geli\u015fim tarihi tutulmad\u0131\u011f\u0131ndan bu konu belirsiz olsa da bulunan kan\u0131tlar onun Orta Asya T\u00fcrk k\u00f6kenli bir tatl\u0131 oldu\u011funu g\u00f6stermektedir. Zamanla Topkap\u0131 Saray\u0131’nda bug\u00fcnk\u00fc halini alm\u0131\u015ft\u0131r.\"\"<\/p>\n

Bu \u015fekilde ele al\u0131n\u0131rsa baklavan\u0131n k\u00fclt\u00fcr olarak i\u00e7selle\u015ftirildi\u011fi ve yerelle\u015ftirildi\u011fi s\u00f6ylenebilir. G\u00fcn\u00fcm\u00fcz k\u00fclt\u00fcr\u00fcne kat\u0131l\u0131m\u0131 a\u00e7\u0131s\u0131ndan baklava k\u00f6ken olarak Anadolu\u2019da yerle\u015fik \u00d6n T\u00fcrklerden bu yana \u0130skilip’lidir ve do\u011fal olarak bir T\u00fcrk tatl\u0131s\u0131d\u0131r. Antik \u00e7a\u011fdaki \u0130skilip’in \u015fifa olan anlam\u0131 bak\u0131m\u0131ndan da olgu ele al\u0131n\u0131rsa baklavan\u0131n bir ila\u00e7 olarak \u00fcretilmi\u015f oldu\u011fu g\u00f6r\u00fcl\u00fcr.<\/p>\n

Baklavan\u0131n k\u00f6keninin S\u00fcryanilere dayand\u0131\u011f\u0131 iddia edilse de bu iddiay\u0131 destekleyen bir kan\u0131t bulunamam\u0131\u015ft\u0131r.<\/p>\n

Di\u011fer yandan, baklavan\u0131n tarihi Asurlular’a kadar uzan\u0131r ancak bu tatl\u0131, iki hamur aras\u0131na kuru meyvelerin serpi\u015ftirilip, f\u0131r\u0131nda pi\u015firilmesiyle yap\u0131l\u0131yordu. Bu baklava d\u00fcnyan\u0131n \u00e7e\u015fitli uluslar\u0131 taraf\u0131ndan \u00e7ok sevilmi\u015f ve de\u011fi\u015fik \u015fekillerde yap\u0131lm\u0131\u015ft\u0131r.<\/p>\n

Vr\u0131onis, Deipnosopiste’de belirtilen gastris, kopte, kopton veya koptoplakos gibi eski Yunan tatl\u0131lar\u0131n\u0131, baklava olarak tan\u0131mlam\u0131\u015ft\u0131r ve bunlar\u0131n Bizans tatl\u0131s\u0131 oldu\u011funu iddia etmi\u015ftir. Ancak d\u00fcnyaca \u00fcnl\u00fc yemek uzman\u0131 Charles Perry bu tatl\u0131lar\u0131n baklava olmad\u0131\u011f\u0131n\u0131 \u00e7\u00fcnk\u00fc bu tatl\u0131lar\u0131n hamur i\u00e7ermedi\u011fini g\u00f6stermi\u015ftir. Bu tatl\u0131lar f\u0131nd\u0131k ve bal\u0131n kar\u0131\u015ft\u0131r\u0131lmas\u0131yla yap\u0131l\u0131yordu ve bug\u00fcnk\u00fc pasteli veya helvaya benziyorlard\u0131. Perry ayr\u0131ca ince ekme\u011fin (yufka) aras\u0131na malzemeler koyularak yap\u0131lan yemeklerin (\u00f6rn. b\u00f6rek) T\u00fcrk k\u00f6kenli oldu\u011funu ve bu tekni\u011fin Orta Asya T\u00fcrk k\u00f6kenli oldu\u011funu belirtmi\u015ftir.<\/p>\n

Baklava benzeri bir tatl\u0131ya dair ilk kay\u0131tlar \u00c7in Yuan (Mo\u011fol) hanedanl\u0131\u011f\u0131 zaman\u0131ndaki bir yemek kitab\u0131na (1330) dayan\u0131r. Tarif edilen tatl\u0131n\u0131n ismi g\u00fclla\u00e7t\u0131r ve b\u00fcy\u00fck ihtimalle bug\u00fcn bildi\u011fimiz g\u00fcllac\u0131 kastetmektedir.\u00a0\"\"
